I made an amazing batch of peach salsa and I may have went a little crazy. I found these interesting orange chiles. They were hot, but also had a unique flavor. So i roasted a few peaches and added the spicy golden chiles. Delicious, but i have way too much!
I'm going to make a little ceviche and then add some of the salsa. I am also making seared halibut tacos. I need more ideas. I'm thinking pork chops might be a good idea.
Where are my foodies with more ideas?

Peach seems like it could go with chicken as well?
I wonder if you could add a little into peach/blueberry cobbler?

I think grilled meat (any kind, really) would good great. I love the idea of pairing with a cobbler- that sounds divine.

This would just be a party suggestion, but put a block of cream cheese on a plate and a generous couple spoonfuls of the hot peach salsa, and serve with crackers or ?

I like the idea of chorizo, but not beef or pork. I'll make a small batch with ground chicken. Maybe add some star anise and minced ginger to give it a slightly Asian flavor. And I'll take your idea, Superesse and add it to cream cheese. 8 have some leftover phyllo dough, so ill spread cream cheese, a few thinly sliced peaches and the salsa I made on top and bake it till the dough is flaky.
So far i have eaten it on crackers with goat cheese, on tortilla chips, and just spooned it by itself in my mouth. I found i had to drink a few sips of milk between mouthful. LOL because it gives me the hiccups it was so hot. But it is delicious.
I may or may not make it into a bbq sauce by adding Molasses and brown sugar and a few more roasted tomatillos or orange tomatoes. But that will be the next batch. I will be growing my own next year.
Oh, and the name of the chiles are manzano chiles. 😋
ETA: they are hotter than Serrano chiles but not as hot as habanero. So go easy if you can't handle too much heat!!! But they definitely have a unique taste!
